Souffle! It’s basically just eggs and a little chocolate (or whatever flavor). Has a reputation for being challenging but really super simple. I like to make this one and usually replace the sugar with sweetener (I’ve been using allulose recently. Don’t use Stevia, it doesn’t play well with chocolate baked goods).
I also make a vanilla version recently and used it as a base for strawberry shortcake. It was bomb.
My birthday is also in a few days (happy birthday!) and in years past, if I’ve been really hitting the dieting hard, I’ve gotten an Edible Arrangements. (Not sure where you’re located, but it’s just fruit on a stick, lol. Get some dipped in chocolate for a special treat.)
What about a pavlova? It’s a meringue nest with fruit and some lightly sweetened whipped cream or even a little lemon curd. It will feel very celebratory and you can even put candles in it! Or you could make a makeshift pavlova sundae with fruit, whipped cream and one or two meringue cookies on top. :)

Super easy to make and honestly doesn’t taste like a dupe. The sweetened almond milk really makes the pudding taste like regular pudding. And you can add bananas, whipped cream, chocolate chips, or low cal chocolate syrup on top!
