Salt is never an issue imo (unless critically near stroke condition). There is a book out now titled something like “salt is life” doing a thorough debunking regarding salt allegedly causing health problems.
Smoke in itself is indeed carcinogenic, but the dosage in smoked foods is negligible in my opinion. (e.g. compared to lung cancer risk going up by \~2500% when smoking tobacco for years.) I believe nitrite dosage is also rather negligible in this regard.
My only big concern, is that pigs tolerate nearly 100% grain feed, causing very high omega-6 accumulation in their fat tissue, compared to sheep and cows who require \~70% hay in their feed to survive. (I think this vid has a lot more details: https://www.youtube.com/watch?v=7kGnfXXIKZM)
Personally, I have eaten a bit more salami than I ideally would like the last year. I will try to get back to my old system, where I only bought it occasionally like once a month. Problem is its cheap, yum, and great for keeping my digestion humming along..
