This is exactly what I do. Once the body has become fat-adapted then it makes sense to restrict dietary fat, cause the body will just feed on its reserves. Keeping protein macros consistent to maintain and repair muscle mass at the same time. Sounds like you’ve got a solid plan.
From everything I’ve read, I don’t think intentionally restricting your calories so much during eating periods is good long term. Definitely a solid idea short term, say like a month. I just do keto and right now I’m still losing weight without calorie counting even when I feel like I overeat. I started throwing in multiple fast days a week a few weeks ago.
