Where’s the confusion? You just laid it out: First round was meat and veggies, second round was Indian food and ice cream and brownies and you’re confused why you’ve stagnated? When was the last refeed w/all that?
Another issue with Indian food, besides the carbs, is that so much of it is cooked with vegetable oil (poly unsaturated fat, or PUFA). PUFA slows your metabolism and makes you more hungry, and insulin-sensitive - which makes it easier for your body to store fat the next time you eat.
Tucker Goodrich has some great talks about vegetable oils on YouTube.
Sugar and starch causes your body to hold onto water. I’d recommend keeping carbs to 20g or less TOTAL per day during re-feeds. Part of refeeds is learning to eat differently or you will regain the weight. Cut out sugar except for holidays. r/sugarfree Sugar is really unhealthy and it also increases appetite. You cannot outfast a bad diet.
It’s water weight. It might take a few days to shed. It can slow down your weight loss as well because you would have been kicked out of ketosis (which allows the burning of fat) with the carbs and sugar. Just get back on the wagon. All is not lost. Although not recommended, I eat a small portion of carbs on my refeed (I.e. potatoes, rice, French fries, pita with a gyro, a waffle with fruit, etc.) but I try to stay away from sugary crap food. It helps to stay active. And don’t forget, Cole recommends a small meal, preferably low carb to be eaten in an hour to break your fast before you roll into another fast. 2500-3000 calories might be a bit much based on his recommendation.
