Type of fast (Regular 18-6 IF with less carbs) 1 day of week is my no salt day, I eat all fruits during that. I also plain to complete 12,000 steps every day with some light GYM from next week

I had strong determination this time. After a vacation trip (in which I gained 8-10 lbs). I decided to do IF this time with more determination. have done 16-8 few years back.
I am only worried about hair loss. Will this diet and also sudden change accelerate my hair loss?
During eating window, I am taking centrum multivitamin, vitamin d3 (I have less) and b12(almost borderline). Should I take anything else? I am also applying minoxidil.
Any suggestions to combat plateau and hair loss in the future?

Note: I have lost 8 pounds in four days (today is day 5). I drink 73 ounces of water daily and eat between 800-1200 calories daily depending on appetite after fast.
