Are you trying to switch fields to work in nutrition or just education yourself for personal use?
If the former, this post belongs in /r/dietetics as discussion about nutrition as a profession is off topic for this sub.
If the latter, it would be much cheaper and more efficient for you to take your family to see a registered dietitian. Depending on your insurance, nutrition counseling from an RD/RDN may be covered, maybe even without a copay.
I´ve got my bachelor’s degree in nutritional science for a while now and to sum it up: Try to eat as many veggies and fruit as you can, try to go for whole-grain stuff, don’t consume too much salt, don’t regularly consume too many calories, and regularly do some sport. Depending on your diet and where you live, supplement B12 and/or D.
That’s literally it. Have a balanced diet that mainly relies on plants and add whatever you like to it. A steak, desserts, alcohol, .. all absolutely fine in moderation. If it’s a field that really interests you and you have the time and money, sure, go for it. But regarding a healthy diet, there isn’t that much to know. There are no secrets and super foods.

If you just want to know what to do for health…rockglf basically summed it up. Don’t complicate it. Live an active life, eat well, and make time for friends family and fun.
If you want to know more details on the biology and physiology for your own knowledge, take some classes on coursera.
If you want to change professions, don’t do a bachelors degree- you already have one. Take whatever prereqs you’re missing at a community college and enroll in an RD program (which have now gone to a Masters degree)
Also, ignore 99% of all the bs that’s out there. Don’t fall for keto or other fad diets. Eat a balanced diet and get an many unprocessed plants into your body as you can.
