Hi OP! Sorry, I don’t have an answer, but I’ll be following. A family member of mine has similar issues and hasn’t really tried fasting, only elimination diets, which really did nothing for him. Have you tried keto? That’s another thing I might suggest to try. Between fasting and keto, I really don’t know which is better other than the personal choice of which feels more doable and/or how much body fat you have to begin with to fuel your body during the fasting period.
I don’t have immune issues or really any health issues other than being overweight. I have done quite a bit of fasting, up to 21 days at a time. I did, generally, feel good while fasting. But, again, I didn’t start out with any symptoms to check for improvements other than body weight.

I have a benign neurological syndrome that impacts my muscles and joints. I have very poor flexibility, joint issues, painful cramps and spasms etc.
I personally (and emphasise that this is my subjective experience and is not representative of anything else other than that) have found that there is a very strong correlation between my diet and the severity of my symptoms. Cutting out all alcohol, reducing my sugar/carb intake, and fasting for 24 hours every other week has significantly improved my quality of life and has enabled me to live life to the fullest. Adding in a strength workout a few times a week and good sleep hygiene, and I have managed to get off all medication and feel like me again.
I am a big believer in medicine and have a killer team of doctors I have worked with, but most of this stuff has been a result of my own research, experimentation and trial and error. Like anything YMMV, and only you and your doctors know what you are dealing with etc. I hope you find a way that works for you!
There are a few mushrooms whose compounds have been found to have very strong immune system support effects. I would mention some by name but every time I do, people here react like most nutritionist do when you mention fasting…
