A month ago I got my "500 hundred fasts" badge in my tracking app. It's been about a year-and-a-half. But I'm feeling sullen and bored. I miss having a variety of foods. I am not overweight - my BMI was 20.5 when I started IF. Now I weigh about 5-6 lbs **more** than when I started (not my goal - I wanted to maintain).
I work out everyday. I eat the same OMAD everyday - a huge vegetable stir fry with chicken, tofu, eggs, and konjac noodles. This is followed by too many keto sweets (Nick's ice cream, Barebells bars, homemade low carb baked goods, etc). Then, feeling guilty about the sweets, I begin my next fast. It has been months and months of this.
I'm so acclimated to OMAD that I can't eat any other way at this point. Day after day. I would love to break out of this rut and transition to "IF-lite", but I my body expects large amounts of food once a day. I have a hard time stopping once I start eating. How can I "re-train" my body to eat multiple meals?

Learn to cook other things. There are millions of cooking videos on YouTube you can learn from. Expand your culinary horizons.
If you don’t want to shock your system going off OMAD, then just add time to your eating window until you get to a place you’re comfortable with.
But I’d work on the foods. You’ll appreciate it later.

This was my situation when on keto OMAD for years. My solution was going over to AD OMAD (47:1), and no longer restricting carbs/sugar. (Well I still eat majority meat and butter, since I get IBS flare-up otherwise.)
It was tough to get used to (lots of crashing and re-trying), but now I love it so much.
