Bone broth is a great choice for fast breaking. I wouldn’t do dairy or meat the first day.
My general fast-breaking protocol is to take half as long as the fast to refeed, starting with easy to digest protein and non-dairy probiotics. Things like bone broth, Kimchee or sauerkraut, maybe the next day I might introduce a bit of fish. Cucumber and tomato is also a nice light salad and easier to digest. Avocado is good too. I’d skip the onion.
I would save the leafy greens and meat and dairy for later in the refeed.
I use the days to ramp up calories, so from a 7 day fast, day 1 refeed would be 25-50% of calories, day 2 50-75%, day 3-4 75-100%.
Thats how I do it, and I go about 2 hours between foods to make sure I don’t have a bad reaction. I’d rather wake up my gut slowly than spend my day on the loo.
You’re right at the length of fast where it starts becoming much more important how to break your fast - though rare, things like refeeding syndrome could occur. More commonly if you eat a big meal with a lot of carbs you are at a very high risk of having an upset stomach. Have some bone broth or eat something small and then an hour or two later have a regular-sized meal.
