You sound motivated, that’s a great first step. I adjusted more easily than I thought, but keep yourself distracted/busy if you get hungry. You, too, might find it really manageable and eventually easy. The benefits will come pretty quickly, and once you get hooked on those it’s easy to stay motivated. You deserve the good health ahead of you, enjoy!
Black coffee and herbal tea have saved me from my hunger on multiple occasions.

I’m about a month in, so I have some decent and relevant information for you!
First few days you will be hungry in the hours leading up to your eating period. Like others have said, utilize coffee and tea. This goes away pretty quick.
Have a plan for what you’re going to eat. Too many times it hits 30min before my eating period and I have no clue what to get or start something at work and I end up having to get something quick and not as healthy.
Water water water - I’ve been drinking a gallon a day and it’s helped tremendously with hunger.
Find someone to hold you accountable to it!
Good luck, you got this.
