36 M, SW 245, CW 238, GW 195. I started IF a little over a week ago with 16:8 because it was easy and presumably safe as I read more on the health implications. Since Saturday my objective is a minimum of 16:8, but not breaking fast until needed which has meant OMAD on Sat, Mon, and Tues. I plan on eating no later than noon tomorrow.
Question is, am I better off adhering to a schedule or just seeing how my body does each day and challenging myself (within reason) to keep fasting as long as possible.

As long as your adhering to your window I think your strategy is fine. Say if your eat window is from 11-7 even if you’re eating OMAD it’s fine as long as it’s within those times. Take note on how you feel mentally and physically each day and go from there.
