Maybe a smoothie? Chuck a bunch of fruit and add spinach & kale in there? I microwaved a lot of frozen bags broccoli and sweet potatoes during my last “bout” w depression. I didn’t have the capacity to really cook much so I did bagged salads w tinned albacore or tinned boneless skinless salmon and microwaved broccoli for dinner. I even did frozen pizza w microwaved broccoli. Sounds silly but I always made sure to eat an apple and an orange daily no matter what.
With depression the problem isn’t the veges, the problem is you don’t want to do anything. So the solution is to kick your ass and do it. Yes it’s hard but it’s also the only way you will really get it of depression, maybe try new recipes, invite someone over so you have to cook, but do something to get out of depression.
How I do it is make a big green juice each morning of mostly vegetables over fruits, add some fibre in there so you’re not burning the fructose too quickly. You can take it one step further and add spirulina.
Really really easy way of getting nutrients in.
I’m just finally coming out of a month long depression. Sometimes, “just get it done and cook” is simply…. impossible. I get it.Cans of beans are amazing. An 8 bean salad with premixed beans is loaded with energy, healthy, and takes less than 5 min without a single pot or pan to clean. Drain the beans, toss in a bowl and mix with oil and vinegar, with some salt and pepper. If you wanna get real fancy, toss in a tin of pre-chopped palm heart. Flageolet beans are super tasty too. Toss the entire tin into a pot on med/low heat, add a chunk of butter, and a clove of garlic. Summer for 5 min. Good in the fridge for a few days and heats well in the microwave. If you’re feeling a bit ambitious, go to the store once and stock up on veggies, they can last a while in the fridge. Zucchini, broccoli, cauliflower, brussel sprouts. All these can be tossed into a dish and thrown in the oven at 350 with some oil and salt. It’s a bit longer, but it’s one single dish and there’s no real cooking involved. Set a timer and you’re good. Also, chopped tomatoes and cucumber with cheese and balsamic takes maybe 5 min with a single dish to clean after.there are also a lot of preserved veggies, ready to eat. Asparagus, beans, artichoke hearts, all ready and available at the pop of a jar.I find that if you only have fast and healthy stuff available in front of you, you’re more likely to cook that instead. Don’t fall into the rabbit hole of ordering takeout. Depression sucks. Good food makes it suck a little less. You’ll get through this.
