I have been meal prepping past 6 months and for the past 1 month I decided to switch the way I include vegetables in my meals.
Previously, I used to steam spinach, carrots and brocollis, and then have it with cooked chicken. Although pretty low calorie, I realized this was very difficult to eat because of how bland it tasted. I absolutely started to hate the spinach and brocolli. Although, I did lose quite a bit of weight using this diet.
Now, I saute french beans, white onion and red bell peppers in a little bit of olive oil along with garlic salt and pepper. Apart from that I also started rice+sweet corn+frozen peas with little bit of soy sauce and oyster sauce. It tastes much better but it does increase the calorie count per meal.
I just wanted opinion on, if the vegetables I substituted makeup for spinach, carrots and brocollis which are pretty high quality veggies in terms of nutrition?

I think you should maybe look for new ways of cooking the carrots, broccoli, and spinach. They’re incredibly nutrient dense, so it would probably be worth more exploration. But as long as you’re still getting vegetables, that’s what matters!
