There are micronutrients (such as vitamin C or iron or potassium) in most foods, but in terms of noticeable contributions to the weight of each item, we’re mostly talking about water. Anything even remotely soft or liquid-y (i.e., not completely dried out or dehydrated) will have a substantial amount of water weight.
I work at a nutritional label lab. A lot of food is >60% water and I have even seen some broths/ soups being 99% water. Fat counts for 9 calories/gram and carbs and sugar count as 4 calories/gram you can see it on your label if you do the math. There’s also vitamins which make of a very small amount of the weight. There is also minerals which can have be anywhere from 0.5%-10% of the weight
