When does a fast ACTUALLY start?

As soon as you take your last bite of food? 30 minutes after your last bite of food? And hour? Two hours? I plan on doing a 24 hour fast. My last meal was today (Sunday) at 3pm, will eat again Monday afternoon at 3pm. But is that really a true 24 hour fast if I can feel the food in my stomach? Do fasts start after someone is done digesting the food? If so, I'm sure digestion time is different for everyone, how would one determine when to start a fast? Sorry if this is a silly question, just curious if I'm doing this wrong. It's been an hour since my meal and I still feel really full, doesn't feel like a start of a fast to me.

I always wondered what everyone thought about this, I usually wait a few hours after eating to start the timer. My last meal is usually dinner, and sometimes late snacks so I usually just start it the apps for midnight or 1 am.

IMHO-

Fast starts the second you stopped chewing. The state of the fast goes through phases based on digestion, and available glucose via glycogen. I’d call that p1 for finishing digestion, p2 for finishing glycogen, and p3 leads into the rest of the fun.

Anyway, that’s my take on it.

It takes a couple hours to « kick in » it’s not like you ended your meal and your body will enter fast mode instantly haha. It’s a process but when you say you do a 24 hours fast it means you won’t eat for 24 hours though you’ll be in a faster state for a little less than that.
