I have bought many avocados Costco that never ripened. They stayed hard so had to toss them. In researching, I heard that some suppliers put some sort of coating on them that keeps them from ripening too fast, and if you scrub it off will allow to ripen normally. Try it and let us know if it works!
Put the hard avocados in a closed paper bag on a room temp counter (must be paper, not plastic) and check again in 24 hours. Ripe avocados will be a bit soft to touch. In my experience, they need to be âhuggedâ in a paper bag climate to ripen and its worth the wait.
Iâve heard that if avocados are picked prematurely, they never ripen up. Happened to me a couple of times - left unripe avocados sitting for more than 2 weeks, their skin became soft and saggy, but the inside never softened. After ages, I just threw them away. :(
Grocery stores store Avocados in the fridge till they are ready to pull and put out. So if you buy and put in your fridge youâre not allowing the fruit to ripen. So I always leave out and then once they are ripe (I go by how they feel) I place in the fridge.

I have found that sometimes, some avocados seem to stay hard on the outside but have turned the right color and are actually the right texture and ripeness on the inside. Someone else mentioned a coating and maybe this has to do with that, or the time at which the avocados were picked.
I had the same problem. Sometimes they just wonât ripen because they were picked too soon and/or kept at too cool a temperature. The oils wonât fully develop in those cases so they will stay rubbery and hard. I had to throw some out that were like this.
PSA on avocados⊠you donât have to squeeze it. Check the stem/where the stem was.

When you buy avocados and are rock hard just wrap them in newspapers and put them in a dark place we usually wrap them in newspapers and put them in inside our clothes in drawers theyâll mature very quickly. Donât squeeze them theyâll just get a dark spots where you squeeze!
